Classic Vanilla

You can never go wrong with Classic Vanilla! What you need:

In a medium saucepan, mix milk, egg yolks, salt, and sugar. Place pan over medium- high heat and whisk until it reaches a simmer. Lower heat to medium and continue whisking for until mixture begins to thicken (approx. 5 minutes). Strain mixture into a large bowl then whisks in half-and- half, vanilla, and cream. Cover with plastic wrap and refrigerate until thoroughly chilled (approx. 2 hours). Transfer to ice cream maker and follow instructions.

Chocolate

Who doesn’t love Chocolate ice cream? All you need are the same ingredients for vanilla, along with 1 cup of semisweet chocolate chips, melted.

Corn Ice Cream

Ready to try something new? Corn ice cream is a rare gem, but an absolute delight! What you need:

Cook kernels in a dry skillet over medium-high heat, stirring, until browned (approx. 5 minutes). Transfer kernels to a large heavy saucepan. Add cobs, 1/2 cup of sugar, cream, and milk. Bring contents to a boil, stirring constantly, then remove from heat. Remove and discard cobs. Puree mixture until smooth with a stick or jar blender; pour back into the saucepan.

In a separate bowl whisk, together with egg yolks and remaining sugar in a bowl. Bring the saucepan to a low simmer and remove from heat. Slowly whisk one cup of corn mixture into contents in bowls. Add contents of bowl to the saucepan, whisking constantly. Continuously whisking, Cook, whisking over medium-low heat until thick enough to coat a spoon (approx. 6 minutes). Your mixture has now formed a custard.

Next, pass custard through a sieve, removing as much liquid as possible. Chill thoroughly. Transfer to an ice cream maker and follow maker’s instructions.
