Salmon Breakfast Casserole

Are you looking for a breakfast casserole that doesn’t just include eggs, bacon, and cheese? Try this smoked salmon breakfast casserole that is loaded with sliced potatoes, smoked salmon, and some goat cheese and herbs. This is a great recipe to expand your palate and also something your whole family will enjoy.

Ingredients

  • 1 leek, cleaned and thinly sliced
  • 1 tablespoon oil, plus more
  • 1 small shallot, minced
  • 1 pound potatoes, peeled and thinly sliced (see notes)
  • 2/3 cup milk (or half and half)
  • 2 teaspoons Dijon mustard
  • 8 large eggs
  • 1/2 cup whole milk ricotta cheese
  • Pinch of smoked paprika
  • 4-8 ounces smoked salmon, flaked
  • 1 tablespoon dried chives
  • 2-ounces goat cheese, crumbled
  • fresh dill, for topping

Instructions

Step 1: Preheat the oven to 350ºF.

Step 2: In a 10-inch skillet over medium-high heat drizzle a little oil. Then add the minced shallots and thinly sliced leeks to the skillet and cook the for 5 minutes or until they soften. Tip: Sprinkle them with salt and pepper while they cook.

Step 3: Once the leeks and shallots are cooked move them to a small plate.

Step 4: In the same skillet, add the sliced potatoes and 1 tablespoon of oil and cook them for 8 minutes while occasionally stirring and flipping them.

Step 5: While you cook the potatoes, start the egg mixture. In a large bowl, whisk the eight eggs, 1 tablespoon dried of chives, 2/3 cup of milk, pinch of paprika, 1/2 cup of ricotta, 2 teaspoons of mustard, and a pinch of salt and pepper.

Step 6: Once your potatoes are done, layer them with the leeks and scatter flaked salmon on top.

Step 7: Pour the egg mixture over the potatoes, leeks, and salmon, and spring the crumbled goat cheese on top.

Step 8: Place the skillet or baking dish in the oven for 35-45 minutes or until the egg mixture sets. Then let the casserole cool so that it’s easier to slice, and sprinkle with the optional chopped dill.
